Poached Salmon
Serves 3

  1. 4C water
  2. 1C white wine
  3. 2 bay leaves
  4. 1t oregano leaves
  5. 1t sage
  6. 2T olive oil
  7. 3-4 medium pieces salmon
  8. Bib or leaf lettuce
  1. Put water, spices and olive oil in a pot and bring them to a boil.
  2. Reduce the heat and add the salmon.
  3. Cover the pot and let it simmer for 8-10 minutes.
  4. Carefully remove the salmon.
  5. Serve with a dill sauce or Ranch dressing over a bed of leaf or bib lettuce.
  6. Garnish just before serving.
  1. Box: You can serve the salmon with Ranch dressing or dill and sour cream on the side.
  2. Fruits such as blueberries, raspberries, strawberries or vegetables such as thin carrot slices or scallion slices all make nice garnishes.
