Date-nut Fingers

  1. 2 eggs
  2. ½t vanilla
  3. ½C all purpose flour
  4. 1t baking powder
  5. ½t salt
  6. 1C chopped nuts
  7. 1C chopped dates
  1. Beat the eggs until they are foamy.
  2. Stir in the sugar and vanilla.
  3. In a separate bowl, mix the flour, baking powder and salt then combine with the egg mixture.
  4. Stir in the nuts and dates.
  5. Spread in a greased 8 inch pan
  6. Bake at 325 degrees for 25-30 minutes or until the top has a dull crust.
  7. Cut into long rectangles (fingers) and roll each one in powdered sugar while still warm.
